Irish Potatoes

Globally the irish potatoes are the fourth largest food crop following rice, wheat and maize. The edible part of the plant is an underground stem called a tuber (not a root). Irish-potatoes contain 2% protein and 18% starch. They are an expensive source of carbohydrates and, when prepared properly, provide good amounts of vitamins and minerals. China is now the world's top potato producer, followed by India, Russia, and Ukraine. The United States is the fifth largest producer of potatoes in the world (npc).
